What’s Healthy About This Recipe
Chicken Breast: is an excellent source of lean protein, which helps support muscle maintenance and keeps you feeling full and satisfied. It’s also relatively low in carbohydrates.
Spinach: provides vitamins A, C, and K, along with folate, iron, and antioxidants. Adding fresh spinach to the filling is an easy way to increase the vegetable content of the meal.
Fresh Garlic: contains sulfur-containing compounds and antioxidants that can contribute to overall health. It also adds plenty of flavor without needing a large amount of salt or fat.
Parmesan Cheese: provides protein and calcium, important nutrients for maintaining strong bones and muscles. Because it has a naturally bold, salty flavor, a small amount goes a long way.
Cream Cheese: adds creaminess and richness to the filling. Using it in moderation keeps the dish satisfying while allowing the spinach, garlic, and Parmesan to provide plenty of flavor.
Paprika: adds color and flavor while contributing antioxidants such as carotenoids. It allows you to build flavor without relying on heavy sauces.
Onion Powder & Garlic Powder: These seasonings add concentrated savory flavor without adding significant calories. They help make the chicken flavorful from the inside out.

Ingredients
2 large boneless, skinless chicken breasts
4 oz (½ cup) cream cheese, softened
1 cup fresh spinach, finely chopped
¼ cup Parmesan cheese, grated
2–3 cloves fresh garlic, minced
½ tsp onion powder
½ tsp garlic powder
½ tsp paprika
½ tsp salt
¼ tsp black pepper
Butcher’s twine, optional
Directions
- Make the stuffing: In a bowl, combine the softened cream cheese, chopped spinach, Parmesan, minced fresh garlic, ¼ tsp garlic powder, and a pinch of salt and pepper. Mix until well combined.
- Prepare the chicken: Pat the chicken breasts dry. Using a sharp knife, carefully slice horizontally through the thickest part of each breast to create a pocket. Don’t cut all the way through.
- Stuff: Divide the cream cheese mixture between the two chicken breasts, spreading it into the pockets. Don’t overfill.
- Secure: Fold the chicken closed. If desired, use butcher’s twine to tie each breast in 2–3 places so the filling stays inside while cooking.
- Season: Mix the onion powder, remaining garlic powder, paprika, salt, and pepper. Rub the seasoning mixture all over the chicken.
- Air fry: Preheat your air fryer to 375°F (190°C) for about 3 minutes. Place the chicken in the basket in a single layer.
- Cook for 18–24 minutes, flipping halfway through if your air fryer cooks unevenly. Cooking time will depend on the thickness of the chicken.
- Check the temperature: The thickest part of the chicken should reach 165°F (74°C). Let it rest for 5 minutes before removing the twine and slicing.

Tips
- Don’t overstuff: Too much filling can leak out as the cream cheese melts. (I made this mistake in my video!)
- Use softened cream cheese: It makes mixing and stuffing much easier.
- Fresh garlic gives the best flavor, but you can adjust the amount to taste.
- If the chicken breasts are very thick, gently pound them to an even thickness before cutting the pocket.
- Butcher’s twine is optional, but it helps keep the filling contained.
- Let the chicken rest before cutting so the hot cheese filling has time to settle.
- Always use a meat thermometer rather than relying solely on cooking time.
