They’re crispy, cheesy, buttery, and wrapped in flaky puff pastry—basically, jalapenos decided to put on a fancy little jacket. Fun fact: jalapenos actually get their heat from the white membranes and not the seeds, so you can control the spice level depending on how much you remove. These are perfect for game day, parties, or those moments when you tell yourself you’ll eat just one. Spoiler: you probably won’t.

These puff pastry jalapeno poppers may be a cheesy, buttery treat, but the fresh jalapenos bring some good stuff to the party too. Ingredients
Jalapenos: Fresh jalapenos work best for this recipe because they have a firmer texture and a brighter flavor. Choose peppers that are smooth, firm, and free from soft spots. For less heat, remove the seeds and white membranes before filling.
Puff pastry: The brand of puff pastry can make a difference, especially when it comes to how flaky and golden the poppers turn out. Use a good-quality puff pastry and make sure it is thawed but still cold when you wrap the jalapenos. If the pastry gets too soft or sticky, pop it back in the fridge for a few minutes.
Cheddar cheese: I recommend using old cheddar because its stronger, sharper flavor pairs really well with the spicy jalapeno. A firm block of cheddar is also ideal since it can be cut into pieces that fit neatly inside each pepper. Avoid pre-shredded cheese for this recipe since we’re using blocks that melt right inside the jalapenos.

Jalapeno Poppers

8 jalapeno peppers
1 sheet puff pastry, thawed
8 blocks of cheddar cheese, about 1 inch thick each
1 egg, beaten
Black and white sesame seeds (optional)
Directions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare the jalapenos: Slice each jalapeno lengthwise and remove the seeds and membranes. Leave some seeds for extra heat.
- Add the cheese: Place one 1-inch-thick block of cheddar cheese inside each jalapeno half.
- Prepare the puff pastry: Cut the puff pastry into 8 strips, making each strip wide enough to wrap around a stuffed jalapeno
- Wrap: Carefully wrap one strip of puff pastry around each jalapeno, covering the cheese and sealing the edge
- Egg wash: Place the wrapped jalapenos on the prepared baking sheet and brush the puff pastry with beaten egg. Sprinkle with black and white sesame seeds (optional).
- Bake for 18–22 minutes, or until the puff pastry is golden brown and fully puffed
- Rest: Let the poppers cool for about 5 minutes before serving, as the melted cheese will be very hot.
Tips
- For the best results, use a firm block of cheddar cut into pieces roughly 1 inch thick and sized to fit inside each jalapeno.
