⅓ cup (65–70 g) monk fruit sweetener, granulated
3 large eggs
2 tsp pure vanilla extract
2.5 cups (224 g) fine almond flour
1 tsp baking powder
⅓ cup (30 g) unsweetened cocoa powder
¾ cup (130 g) white chocolate chips
- Chocolate Chip Cookie Dough
½ cup (113 g) unsalted butter, softened
⅓ cup (65–70 g) monk fruit sweetener, granulated
3 large eggs
2 tsp pure vanilla extract
2.5 cups (224 g) fine almond flour
1 tsp baking powder
¾ cup (130 g) unsweetened chocolate chips
Directions
- Prepare the cookie dough: For either version, start by preparing the cookie dough. In a large mixing bowl, cream together the softened butter and monk fruit sweetener until smooth and creamy. Add the eggs and vanilla extract and mix until well combined. Add the almond flour and baking powder and mix until a soft cookie dough forms.
- For the White Chocolate Cookie, mix in the cocoa powder and white chocolate chips until evenly distributed.
- For the Chocolate Chip Cookie, fold in the unsweetened chocolate chips until evenly distributed.
- Chill the cookie dough: Cover the cookie dough and refrigerate for about 20–30 minutes. Chilling helps firm up the dough, making it easier to scoop and helping prevent it from spreading too quickly while baking.
- Prepare the puff pastry: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper. Unroll the thawed puff pastry onto a lightly floured work surface and cut each sheet into long triangles, similar to the shape used for traditional croissants.
- Fill the puff pastry: Place approximately 1½–2 tablespoons of cookie dough near the wide end of each puff pastry triangle. Be careful not to overfill, as the cookie dough will spread as it bakes.
- Roll the crookies: Starting at the wide end, gently roll each triangle toward the pointed end, enclosing the cookie dough inside. Curve the ends slightly inward to create a croissant shape and place each crookie on the prepared baking sheet.
- Brush with egg wash: Beat one egg in a small bowl and lightly brush the exposed puff pastry with the egg wash. Try to avoid heavily coating the cookie dough on top.
- Add more cookie dough: For that signature crookie look, place approximately 1 tablespoon of additional cookie dough on top of each rolled pastry. Gently flatten the dough slightly so it can spread over the pastry as it bakes.
- Bake: for approximately 18–20 minutes, or until the puff pastry is puffed and golden brown and the cookie dough is cooked through. Keep a close eye on the crookies during the final few minutes, as the cookie topping can brown quickly.
- Cool and serve: Remove the crookies from the oven and allow them to cool on the baking sheet for 5–10 minutes before serving. The cookie center will continue to set as it cools. Serve warm or at room temperature.
